I’ll never forget the first time I saw a cacao pod in the jungle. After tromping through waist-high buffalo grass, I discovered rows of 10‑foot-tall cacao trees thriving beneath the shade of the jungle canopy.

Cacao is an “understory crop”, surviving only under the protective overstory, linking its success to the health of the surrounding forest. That realization — that chocolate can help preserve the jungle — inspired my journey as a cacao farmer and chocolate maker.
